Meal Planning Wednesday ~ posted on Thursday ;)

The Organised Housewife

I'm back on board with posting my meal plans with The Organised Housewife
so this weeks meal plan goes something like this
Thursday - something from the freezer
I've just been through the freezer and have made a list of everything we have so there is plenty to choose from.
Friday - Mexibake ~ recipe from Planning With Kids
Saturday - Dolmio slow cooked chicken with tomato and italian herbs served with pasta
Sunday - Mummas meat pie and roast vegies
Tuesday - Homemade sausage rolls
Wednesday - Warm chicken and cous cous salad
just me for dinner

Baking - more 2 tone choc chip cookies and Im going to attempt some muffin sized apple pies

I am trying to get right back to homecooked and get into the kitchen some more after the boys were slightly "insane" after chirstmas as we had slacked off
but as you can see there is alot of homemade stuff so I know what's going into our food and into our bodies.

Also I dont necassarily cook those meals on those days its mainly a guide and a way to pick easy meals on our busiest days but I absolutly chop adn chanage days if I feel like it

Meal Planning Wedneday!

When I made my come back
I mentioned that my meal planning day had changed.
It is now on wednesdays mainly due to the fact I work most wednesdays and that Master J developed this new love for grocery shopping!
So our shopping day is now thursday and when our meal planning week starts

Now grocery shopping might not be a fantastic child hood memory for most
but for me It was something I looked forward to when I was on school holidays.
Mum would take my brother and I shopping and we would be treated to a packet of chips and a drink
all while helping take things off the shelves.
So even thought I was stressed to take both of them to begin with we seem to have a routine down pat
we find a park and grab a twin toddler trolley so they can both sit in the front of the trolley then we head to baker delight for cheesymite scolls.
First on the list is fruit and veg I dont tend to spend to mch time in there so I hold off on giving them their snack and drink until we reach Coles.
Then thats where I do the rest of our shopping and everytime we pass the deli J asks for
"miley fitz" aka smiley fritz.. even if he has a mouthful of scroll!
Every week we do the same thing and I hope I am building this great little child hood memory for both of them and eventually get them interested in cooking more once they are a bit older.

Anyways back to the point of the post... The meal plan!

Thursday - Gnocchi Bake from the 4 Ingredients Kids book

Friday - Pastie pie from the freezer or homemade Chicken schnitzel and potato salad

Saturday - just me Moroccan Chicken Risotto

Sunday - Porcupines
the boys have a christmas lunch so they'll have something light like toastie toasties

Monday - Leftover Porcupines for the boys
and Rice a Riso for me after work

Tuesday - Cunchy chicken fingers, pasta salad and roast potatos

Wednesday - Nachos with guacamole, cheese and sour cream

Meal Planning Tuesday & my new keeping organised system


This weeks meal plan is another easy one

Wednesday - warm chicken rolls for the boys
basil & chicken toasties for mummy

Thursday - porcupines & garlic bread

Friday - we have my little cousins 16th birthday party so lots of party food hehe

Saturday - tacos - hard & soft

Sunday - Just me
Out to dinner with a friend

Monday - Just me
homemade vegetarian pizza

Tuesday - Just me
warm chicken salad

As I dont have the boys this weekend im hoping to get some baking and freezer filling done
In amongst preparation for a market & craft projects

A few weeks ago I ordered a gorgeous custom journal from this great little FB page called
Journal Addiction
I receieved it today sooooo exciting
I love stationary and I love being organised so this journal is exactly what I wanted
Michelle was amazing to work with and tweaked all the pages and design until I was completely happy

Needles to say I am over the moon with it

Front cover using my favourite colours, favourite flower and my love for butterflies

Budget page - to write each weeks budget in to allow for changes & extras each week

Meal plan page - starting with wednesday just as I do and extra space at the bottom for notes

Shopping list page - set out in coloumns and groups to make the shopping trip much easier and theres not excuse for missing anything in any of the departments

Last page is To-Do list - with check boxes so I can tick off things as I do them

I love how Michelle understood everything I wanted in my book
and made it really easy to communicate all the small details like the butterfly watermarks
and the shopping list page

Now my goal is to sit down every monday/tuesday and fill out my pages
and every night sit down with my to do list and add things for the next day.

If you're like me and an orgainsing freak fan having a journal full of things like this is like all my Christmas's have come at once ;)

Im off to write out my budget and start my to do list

Meal Planing Tuesday


This weeks meal plan has taken some inspirating from the lovely Larissa of
her meal plan just looks so yummy!

Wednesday - work Cumin Chicken with brown rice salad (recipe from My Pigeon Pair)
the boys will have whatever their dad cooks for them

Thursday - Kangtong lemongrass & chilli chicken stirfry with noodles

Friday - beef souvlaki wraps with salad (inspiration from My Pigeon Pair)

Saturday - gnocchi bake from 4 ingredients Kids Book

Sunday - roast vegetable & feta foccica for me &
ham & cheese quesallidas with roast vegies for the boys

Monday - work Morrocan Chicken Risotto
the boys will have whatever their dad cooks them

Tuesday - Chicken pie from the freezer and homemade chips

Saturday - homemade chicken nuggets, wedges and steamed vegies
Sunday - just me
teryiaki beef stir fry & rice
Monday - just me
chicken schnitzel burger & homemade chips
will freeze extra schnitzel
Tuesday - just me
lasgane & garlic bread from the freezer

Meal Planning Tuesday with a sweet twist...

Soooo some of you may have noticed there was no meal plan for last week?
No? ok good haha
Last week wasnt a very good week at all
So the meal plan kinda ended up out the window and I followed very loosely

BUT this week im back at it feeling more fabulous then ever!

This weeks menu has a sweet twist ;)

Wednesday - Sang Choy Bow using the lettuce for me and wraps for the boys
Thursday - porcupines from the freezer
Friday - spicy chicken pasties (new recipe) & chicken nuggets for the freezer
Saturday - sweets for dinner!!
thought id make some sweets instead of a savoury meal for a little bit fun for my babies
Nutella crepes - 4 Ingredients Kids & Banana smoothies
Sunday - chicken & mozzarella melts - 4 Ingredients Kids for the boys
Chicken & Basil Toasties for mummy
Monday - Ravioli bolognese (with hidden vegies) from the freezer
Tuesday - Crunchy Chicken Fingers with flat hash browns - both from 4 Ingredients kids
will grate extra vegies into hash browns

I'm looking forward to this weeks menu
Its refreshing to start all over again with a clear mind

Meal Planning Tuesday & Lasagne in the Slow Cooker Recipe

Ahhh Tuesday we meet again
Im sure the weeks are getting faster & faster!

Last weeks meal plan went relatively well
I was able to freeze some of the leftover from the meals i cooked just for me
and sent some of the Slow cooker lasagne with the boys for their dinner.

This week we are back to normal excpet for monday where I have my first day back at work
Dinner will be something Ive already cooked and frozen.

So here we go...

Wednesday - Chicken Chow Mein
Thursday - Homemade hamburgers
Friday - 4 ingredients Spaghetti Cup cakes with added vegies
and a pesto pasta for mummy
Saturday - Quesalliadas
ham, cheese & grated vegies for the boys
pumpkin, spinach, feta & red onion for mummy
Sunday - Cohens 1st Birthday Party
So we will have his favourite chicken nuggets & roast vegies for dinner
Monday - 1st day back at work
Chicken Pie which I didnt end up eating last week & popped in the freezer
Tuesday - Pastie Pie

Recipe Book
Lasgane in the Slow Cooker
requested by the gorgeous Fiona
Im a bit of a chuck it in type of girl and dont follow measurements
especially with things like bolognese and lasagnes
So i hope you can all make some sense of my recipe

Ingredients
500gms mince
1 packet of fresh lasagne sheets
1 tin of diced tomatos
1 tin of tomato soup
1/2 lge carrott grated
1/2 lge zucchinni grated
1/2 an onion diced
1/2 a medium red capsicum diced
2-3 button mushrooms sliced
mixed herbs
curry poweder
worstichire sauce

Method
In a bowl mix your mince and vegies together
Add both the can of diced tomatos & tomato soup mix well
Sprinkle in some mixed herbs & curry powder and add a few splashes of worstichire sauce
Mix well

Layer sauce on the bottom of your slow cooker pot so it covers the base
next layer is the lasagne sheets I just rustically rip these and place them over the meal layer
Continue layering meat then pasta until the meal mixtureis gone making sure yor top layer is meat
Grate some cheese ontop
&
Voila!
Place lid on & cook on low for 8 hours
Some how you still get a bit of a crusty edge and it tastes amazing.


Serve with garlic bread &/or salad

Meal Planning Tuesday


Tuesday is here again
Some mmay have noticed I didnt post my meal plan last week
you can read about why here
In short I am now a single mumma of two
So we ate trying to find our feet again

This will also affect my meal plans each week as I am now only feeding
1 adult a 3yo and almost 1yo
And i will also be returning to work
So I will be using the slow cooker and meals I stocked in the freezer last week
you may see some repeats and you will defiantly see lots of easy meals.
There will also be some nights where its just me while the boys are at their dads so they may be leftovers or something out of the cupboard.

Im looking forward to planning meals as a single mum
I dont want to slip back into the boring meals and I'll definatly be freezing lots of leftovers
So hopefully I can give you all some new ideas.
I will also trying my very hardest to include a recipe with each meal plan
Thats tried and tested and loved.

Now.. onto this weeks menu

Wednesday - chicken fried rice
Thursday - Vegie Ribbon Pasta
from the 4 ingredients Kids cook book
Friday - healthy fish n chips
also from the 4 ingredients Kids cook book
Saturday - Small versions of my Chicken Pie 
just me for dinner
Sunday - Teriyaki beef stir fry
just me for dinner
Monday - Lasagne in the slow cooker
Tuesday - Warm Chicken salad
just me for dinner

Recipe Book
This weeks recipe is from the Kids 4 Ingredients Cook Book

My little men absolutly loved it!

Beef & Gnocchi Bake

Ingredients
500gm lean mine beef
700gm jar of pasta sauce with vegetables
300gm ready made Gnocchi
1/2 cup (50g) parmesan cheese, grated

Method
Cook beef mincce until browned, breaking up any lumps.
Stir in pasta sauce and bring to boil.
Reduce heat & simmer for 5mins.
Meanwhile cook gnocchi in large saucepan of salted boiling water for 3-4 mins, drain whe cooked.
Pour beef mixture into a lasagne dish, top with the gnocchi (i mixed ours together)
& sprinkle over with parmesan cheese.
Bake for 10 minutes or until cheese turns golden.

So quick and easy and very yummy

Meal Planning Tuesday


Last week was such a bad week
The meal plan was all over the week and chopped and changed
But i guess thats thats the beauty of of meal planning
You can swap and change when you eat what or modify a recipe
because you already have the ingridients.

This week things are going back to normal :)

Meal Planning Tuesday

Hello Tuesday!
The kitchen is in full swing again this week with a few new recipes
Last weeks Sang Choy Bow was amazing!
Its now apart of our family favourite list
The recipe is at the bottom of the meal plan

This weeks Menu...

Wednesday - Hot Chicken Rolls
Thursday -  Warm Chicken Salad

Friday - Bolognese pasta Pie *new
Saturday - Homemade pizza
Sunday - Roast Beef in the slow cooker and roast vegies
Monday - Enchiladas
Tuesday - Cannelloni (spinach & ricotta & bolognese) *new


Recipe Book - Sang Choy Bau

I modified this recipe slightly to make it quick, easy and more filling.
You can use fresh chilli and garlic and the rice can be served one the side with a lime wedge

Ingredients
500gms beef Mince
1 beef stock cube
2tsps of red Chilli (I used jar stuff)
1tsp of Garlic (jar stuff also)
1 small carrott diced small
Half a zucchini diced small
1/4 red capsicum diced small
1/2 stalk of celery diced small
4tbls of soy sauce
1 packet of 90 second rice
Iceberg Lettuce

Method
* Brown mince and add crumbled up stock cube 
add chopped up vegies
Cook until the vegies start to go soft.

*Remove from pan into a bowl

*Using some of the fat left over from the mince mix
if need be you can add a little bit of oil
sautee 2 tsps of red chilli and 1 tsp of garlic until aromatic.

* Add mince mix back to pan and mix though thoroughly

* Add 4tbs of soy sauce and mix well
Remove from heat

* Heat 90 sec rice following directions
and once heated add to mince mix and combine

*Pull off as many lettuce cups as needed
and place on plate

*Fill cups up with mince and rice mixture

So quick and so easy and So yummy

Meal Planning Tuesday...


Why hello Tuesday, you are here again!
Is it just me or is it really getting quicker and quicker every week?
Hmm...  anywho onto this week meal plan...

Wednesday - Bolognese pie
Thursday - Satay chicken skewers on naan bread with salad and tazitzki
Friday - Nachos with guacamole and sour cream
Saturday - Chicken tacos
another recipe found on Pinterest, will add link later as their server is down at the momment
Sunday - Chicken schnitzel with roast vegies
Monday - Meatballs in the slow cooker
Tuesday - Honey chicken with fried rice
will ither be another Pinterest recipe or kangtong sauce

Meal Planning Tuesday with a Pinterest twist ;)


Tuesday is here again!
This weeks meal plan is a little differnt
I have a few slow cooker meals a few easy family favourites
but im most excitied about the meals I've planned that I've pinned from

I'll add the pic for these ones.

Wednesday - Italian chicken in the Slow Cooker
Thursday - Tacos
Friday - Healthy Baked chicken nuggets with warm potato salad & homemade chips for Master J

Saturday - Lasagne in the slow cooker

Sunday - Lemon & Rosemary Chicken Bake
Using chicken breast instead of legs

Monday - Avaccado & Vegetable rice paper rolls
I will use chicken in them aswell

Tuesday - Mummas Meal Pie

Today is going to be a big cook up day to try and get some basics in the freezer
On the list i have
Bolognese sauce
Homemade chicken nuggets (differnt to above recipe)
Chicken pie (tonight dinner)
Mixed mashed vegies for Lil C
Apple & Cinnamon porridge for Lil C
And prep for slow cooker dinner tomorrow

I'll also hopefully be doing some baking
Apple muffins
Mini Pizza scrolls
Mini vegimite & cheese scrolls

It may seem like a lot but i have Mr S home today and they are all quite easy to make.
Heres to hoping i have the motivation to get most of it done!

Anywho Im pretty excitied about our menu this week
Some really easy meals as i try and find my mojo back that winter has so stealthily stole ;)
And an even better excuse to spend some more time lost in the world of
Pinterest!

Meal Planning Tuesday - double ups and new & easy



Its Tuesday again!
Every week it gets quicker and quicker im sure of it
This week i've doubled up on some meals from last week
Im lacking some motivation
but to make up for it Ive got 2 new recipes that look pretty easy.

Wednesday - warm crumbed chicken salad with an easy homemade dressing
Thursday - Beef, miso & sesame noodles
Friday - Roasted jacket potatos
Saturday - Porcupines
Sunday - Pine nut, parmesan & herb crusted baked fish fillets
Monday - Tuscan chicken and pasta in the slow cooker
Tuesday - Chicken Pie

Meal Planning Tuesday



So It's that time of the week again
7 days have passed and 7 yummy meals have been cooked
Now on to the next 7 meals.

Wednesday - nachos with guacamole and sourcream
Thursday - Chicken, leek, muchroom and sourcream pie
Friday - teriyaki beef stirfry with noodles
Saturday - Toastie toasties
Sunday  - Is master J's 3rd birthday party so leftovers, takeaway or something very simple.
Monday - Chicken curry in the slow cooker with rice
Tuesday - Pasta bake

As you can see lots of very easy meals as we have the big 3rd birthday party i needed quick and easy meals so i can finish up all the last minute details.

Meal Planning Tuesday...

Wednesday - Savoury mince and pita pockets (my friend Miss Al's recipe)
Thursday - Satay Chicken, with salad, and tzatzki on naan bread
Friday - Porcupines in the slow cooker
Saturday - Moroccan chicken and fried rice
Sunday - Chicken schnitzel and roast vegies and gravy
Monday - Beef rissoles with mushroom and onion gravy and vegies
Tuesday - Beef and redwine casserole in the slow cooker with dumplings.

A new recipe, a few new ways of doing things and some yummy winter food!
